Cooking made easy: Coconut macaroons


Ingredients for 50 macaroons:

4 egg white
1 pinch of salt
1 sachet vanilla sugar
70g sugar
70g powdered sugar
3 tablespoons lime juice
250g desiccated coconut
2 teaspoons lime zest
1 teaspoon cornstarch
50 paper wafers
Directions:

1. Add the salt to the egg white and whip until it is stiff.
2. Add the 3 sorts of sugar and keep on whipping until it's stiff again.
3. Stir in the lime juice.
4. Take another bowl to mix the coconut, lime zest and cornstarch.
5. Carefully fold in the coconut mixture to the snow from the first bowl.


6. Put the paper wafers on a baking tray and use two tablespoons to put the coconut mixture on them.




7. Put the macaroons in the oven which you preheated at 160°C (150°C if you have an air circulation oven).


8. Remove the macaroons after 14-16 minutes (10-12 minutes for the air circulation oven).


9. Enjoy!


I hope you like this kind of recipe because I am totally in love with these macaroons. Give me coconut and lime and I'll be happy anyways! Would you like me to post more about baking or not?

  7. Oh that looks so delicious - but to be honest, my mum always makes coconut macaroons for christmas and it's really related with christmas for me, so I can't bake them in september! But I'll certainly give your recipe a try in november/december!
